Narali Bhat Recipe with detailed photos. Narali Bhat or sweet coconut rice is an authentic and traditional dish of Maharashtrian cuisine. Many Maharashtrian families prepare this sweet coconut rice or narali bhat on the occasion of Rakshabandhan / Narali Purnima which is a full moon day during the month of Shravan.
This easy and flavorful recipe of Narali Bhat is prepared by using coconut, rice, sugar or jaggery, and saffron. Here I am using sugar instead of jaggery. When you use jaggery in this recipe, it changes its color. Using saffron in this recipe gives it a nice aroma and color, hence its also called Keshari Bhat.
In this Narali Bhat recipe, I have cooked rice along with coconut which gives it a flavor of coconut. It is very simple to make this recipe on occasion or at any time.

Ingredients
1 cup basmati rice
¾ cup coconut grated
5 to 6 tablespoon ghee ( clarified butter)
3-4 Almonds, cashew nuts and raisins each
¾ cup sugar or as per your test
1-inch cinnamon
3 cloves
2 cardamom
1\2 teaspoon saffron
Preparation
1. Wash and soak 1 cup basmati rice in sufficient water for 30 minutes.
2. Grate the coconut.
3. Cut the almond and cashew.
4. Soak the ½ teaspoon saffron in ½ cup lukewarm milk.
How to Make Narali Bhat
1. Drain the rice after soaking and keep aside for 15 minutes.
2. Heat the pan with 2 tablespoons of ghee.
3. Add almond, cashew, and raisin and fry them for few minutes.
4. Remove almond, cashew, and raisin from pan and keep it aside.
5. Now add ¾ cup coconut into the same pan and roast it for 2-3 minutes stirring continuously. Don’t make brown.
6. Remove the coconut from the pan and keep it aside.
7. Heat the pan with 3 tablespoons of ghee and add 1-inch cinnamon, 3 cloves, and 2 cardamoms( slightly crushed) and fry them for 1 minute.
8. Now add 1 cup basmati rice and stir continuously until it looks dry or for 2-3 minutes on medium-high flame.
9. Add roasted coconut and mix it well.
10. Now add 3 cups of water and stir. The quantity of water depends on the type of rice you are using.
11. When it is boiling, lower the flame and cover with a lid. Cook the rice for 10 to 15 minutes.
12 Now add ¾ cup sugar and mix very well.
13. Add saffron milk.
14. Lastly, add all dry fruits and mix it lightly. Don’t break the rice grains.
15. Narali Bhat or Sweet Coconut Rice is ready to serve.
Note
1. Do not add sugar until the rice is fully cooked. If you add sugar first, the rice will not cook.
2. This narali bhat recipe uses coconut so it can get a little sticky.
3. Remove the brown skin of coconut before grating.
