Schezwan Sauce Recipe | How to make Schezwan Sauce at home | Schezwan Sauce with detailed photos. Schezwan sauce is an Indo Chinese sauce mainly prepared by using dried red chillies, garlic, soy sauce, tomato ketchup, vinegar, and other few ingredients.
This spicy, sweet, and sour oriental sauce is mostly used in schezwan fried rice, paneer fried rice, schezwan noodles, chow mien, spring rolls, and many more dishes. You can also use this sauce with samosa, parathas, and other snacks dishes such as veg lollipop
Tangy and spicy schezwan sauce is different from Schezwan chutney. Schezwan sauce has a spicy and tangy flavour as it contains tomato ketchup while the schezwan chutney only has a spicy flavour. Schezwan sauce is thick and smooth in texture while schezwan chutney has a coarse texture. Here I am sharing a Schezwan sauce recipe. It’s similar to red chilli Sauce.

Ingredients
12 -15 dried red chillies
20-22 garlic cloves
1-inch ginger
1-4 teaspoon black pepper powder(optional)
1 teaspoon soya sauce
2 tablespoon tomato ketchup
½ teaspoon vinegar
½ teaspoon sugar
1 teaspoon cornflour
2 tablespoon oil
Salt to taste
Water as required
Preparation
1. Soak 12-15 red chillies in warm water for 40 minutes or until soft.
2. In a blender, add soaked red chillies, 22 garlic cloves, and 1-inch ginger and blende them.
3. Add little water while blending to make a smooth chilli paste.
4. Now add chilli paste on the strainer. Mash it using the backside of the spoon and strain it.
5. It helps to separate the seeds and pulp.
6. Chilli pulp is ready for further use.
How to make Schezwan Sauce
1. Heat the pan with 2 tablespoons of oil.
2. Add chilli pulp and stir very well for 1 -2 minutes.
3. Now add ¼ teaspoon black pepper powder and salt to taste.
4. Add 1 teaspoon soya sauce and stir very well.
5. Further, add 2 to 3 teaspoon tomato ketchup.
6. Now add ½ teaspoon vinegar and mix well.
7. Cook and continuously stir the sauce until oil leaving the sides of the pan. Also, add ½ cup of water and stir.
8. Add ½ teaspoon sugar and stir until sugar dissolve. Cook the sauce very well on medium-high heat.
9. In a small bowl, take 1 teaspoon cornflour and 3-4 teaspoon water and make lumps free paste.
10. Add cornflour paste in sauce with continuously stirring the sauce.
11. Cook the sauce on medium flame until it looks a little thick.
12. Schezwan Sauce is ready to use.
Notes
1. You can store this sauce for 15 to 20 days in an airtight container in a refrigerator
2. You can skip black pepper powder.
3. Instead of black pepper, you can use the cinnamon powder in this schezwan sauce recipe.
