Thandai Recipe | How to make Thandai with detailed photos. Thandai is a very popular beverage from north India. It is mainly prepared during the colorful festival of Holi and is also made during the festival of Mahashivratri.
Thandai is a refreshing and cooling beverage made from milk, nuts, and spices like fennel seeds, poppy seeds, rose petals, or gulkand. This combination of seeds and nuts helps reduce the excess body heat and will give a cooling effect on hot summer days.
For making thandai, dry rose petals are used, but in this recipe, I am using Gulkand instead of rose petals. Gulkand already has a high amount of sugar in it so avoid adding too much sugar in this thandai recipe.

Ingredients
25 Almonds
10 Cashew
1 tablespoon Pistachio
1 tablespoon poppy seeds (khus khus)
2 pinch of saffron (Kesar) optional
1 tablespoon melon seeds
1 tablespoon fennel seeds (Sauf)
5-6 black pepper
2 tablespoon Gulkand (Rose petal jam) or dried rose petals
3 tablespoon sugar or as per taste
4 cardamom
2 glass chilled milk
1 ½ cup hot water
How to make Thandai Paste
1. In a bowl, take 25 almonds, 10 cashews, 1 tablespoon pistachio, 1 tablespoon melon seeds, 1 tablespoon fennel seeds, 5-6 black pepper, 1 tablespoon poppy seeds, and 2 pinches of saffron.
2. Add 1 ½ cup hot water in it and soak them for 2 hours.
3. After 2 hours, add all soaked ingredients in the grinding jar along with its water.
4. Grind all the ingredients for 1-2 rounds and then add 3 tablespoons sugar, 4 cardamoms seeds, and 2 tablespoons gulkand.
5. Grind it to a smooth paste. You can make 5 glasses of thandai from this paste.
How to make Thandai
1. Take 8 tablespoon thandai paste in a mixing bowl. (For making 1 glass of thandi, take 3-4 tablespoons of thandai paste)
2. Add 2 glasses of chilled milk to it.
3. Whisk the milk until thandai paste and milk are combined very well.
4. Further, sieve the thandai using the strainer.
5. Thandai is ready to serve.
6. Pour thandai in a glass and garnish with some grated pistachio and saffron strands.
Suggestion
1. Adding saffron is optional, you can skip it.
2. You can also add ice cubes in thandai.
3. You can peel the skin of the almonds before grinding.
