Kaju paneer masala is a very simple north Indian curry recipe made with cashew and paneer (cottage cheese).
This creamy Kaju paneer masala is an onion-tomato-based gravy with added cream in it. Adding cream to this recipe gives it a very creamy and rich flavor.
I have used Homemade Paneer to make this recipe more flavourful.
This Kaju paneer masala can serve with Aloo Puri, Garlic Naan, Rumali Roti, or Amritsari Aloo Kulcha.

Ingredients
1 cup paneer cubes, 15 Kaju (cashew), 1 cup finely chopped onion, 1 cup tomato puree, 3-4 tablespoon oil, 1 teaspoon ginger-garlic paste, 2 tablespoon cream, 1 tablespoon coriander leaves, Salt to taste, 1 cup water.
Spices for Gravy
½ teaspoon turmeric (Haldi), 1 teaspoon coriander powder, 1 teaspoon red chilli powder or as per taste, ¼ inch cinnamon (dalchini), 1 bay leaf (tej patta), 1 cardamom (elichi), 1 teaspoon cumin (jeera), 1-star anise (chakra phool)
Preparation
1. Heat the kadhai with 2 tablespoons of oil and fry 15 cashews until they turn golden.
2. Remove the cashew from kadhai once it turns golden.
3. In the same oil, add 1 cup paneer and saute for 2-3 minutes.
4. Keep the paneer aside.
How to make Gravy Paste
1. Add 2 more tablespoons oil in a kadhai and add ½ inch cinnamon, 1 bay leaf, 1 cardamom, 1 teaspoon cumin, and 1-star anise.
2. Now add 1 cup finely chopped onion and sauté until golden.
3. Also, add 1 teaspoon ginger garlic paste and saute till aromatic.
4. Lower the flame and add 1 teaspoon coriander powder, ½ teaspoon turmeric, and 1 teaspoon red chilli powder. Saute until aromatic.
5. Add 1 cup tomato puree and stir.
6. Continuously stir on medium-high flame.
7. Add ½ teaspoon sugar to it. Sugar helps to release oil from gravy paste.
8. Stir continuously until gravy paste looks dry and releases oil.
How to make Kaju Paneer Masala
1. Add 1 cup water in gravy paste and mix well.
2. Add salt to taste.
3. When the gravy starts boiling, add paneer and cashew. Mix very well.
4. Cover the pan with the lid and cook the gravy for 5-7 minutes on a medium flame.
5. After 7 minutes, add 2 tablespoons of cream to it.
6. Lastly, add 1 tablespoon chopped coriander.
7. Finally, Kaju paneer masala is ready to serve.
Suggestion
1. You can add ½ teaspoon Kasuri methi in gravy.
2. You can also add 2-3 tablespoon Kaju paste to make the gravy a little thick.
3. You can add more or less water as per your preference.
