Simple and easy to make Matar Pulao is an ideal lunch box recipe made with green peas, rice, spices, and a few more ingredients.
I have prepared this one-pot pulao in a pressure cooker, but you can also make this pulao in a pan or kadhai.

Ingredients
1 cup basmati rice
1 cup green peas (matar)
3-4 finely chopped green chillies
1 medium-sized sliced onion
1 teaspoon ginger garlic paste
4-5 cashews (Kaju)
1 ½ tablespoon ghee (clarified butter)
1 tablespoon lemon juice
A handful of mint leaves (pudina)
3-4 teaspoon chopped coriander
1 ½ cup water
Spices for Pulao
1 teaspoon cumin (jeera)
1 bay leaf (tej patta)
2 cardamom pod (elaichi)
3 black pepper (kali mirch)
1-inch cinnamon stick (dalchini)
2 cloves (laung)
1-star anise (chakra)
Preparation
1. Wash and soak 1 cup basmati rice in water for 20-30 minutes.
How to make Matar Pulao
1. Heat the pressure cooker with 1 ½ tablespoon ghee. Add 1 teaspoon cumin seeds and fry until it crackles.
2. Add 1 bay leaf, 2 cardamom pod, 3 black pepper, 1-inch cinnamon stick, 2 cloves, and 1-star anise.
3. Further, add 4 chopped green chillies.
4. Add 4-5 cashews and sauté for a minute.
5. Now add 1 sliced onion and sauté until translucent.
6. Also, add 1 teaspoon ginger garlic paste.
7. When the ginger-garlic turns aromatic, add a handful of mint leaves.
8. Now add 1 cup green peas and sauté for a minute.
9. Further, add soaked basmati rice.
10. Gently stir the rice. Make sure you do not break the rice grain.
11. Add 3-4 tablespoons of chopped coriander leaves.
12. Add 1 ½ cup water.
13. Additionally, add salt to taste and mix very well.
14. Lastly, add 1 tablespoon lemon juice and mix well.
15. Close the lid and pressure cook the rice for 1 whistle on medium flame.
16. Let the pressure cooker cool down completely and then open the lid.
17. Finally, matar pulao or peas pulao is ready to serve.
Suggestions
1. You can use fresh or frozen green peas (matar) for making this pulao.
2. Matar Pulao tastes good when served hot.
3. You can serve this pulao with paneer gravy or dal.
