Aloo Puri is a puffed and deep-fried Indian bread made with boiled and mashed potatoes, flour, and some spices. It is a potato-based version of the famous Indian bread “Puri”.
Puri is a deep-fried Indian flatbread, commonly eaten all over India. Normal puri is just made with wheat flour, salt, and water, while aloo puri is made by adding the mashed potatoes and spices to the flour.
Aloo puri is an ideal recipe for kids. It can be served with tomato ketchup or with any other sabzi. You can make this aloo puri more delicious by adding your favorite vegetables (boiled and mashed) along with the boiled potatoes.

Ingredients
1 cup wheat flour
2-3 tablespoon rava (suji/semolina)
2 medium-sized boiled potatoes
1 teaspoon cumin (jeera)
1 teaspoon sesame seeds
3-4 teaspoon chopped coriander
1 teaspoon carom seeds (ajwain)
½ teaspoon haldi
1 teaspoon red chilli powder
1 finely chopped green chilli
Oil for frying
Water as needed
Salt to taste
How to make Dough for Aloo Puri
1. Peel and grate 2 medium-sized boiled potatoes.
2. In a mixing bowl, add 1 cup wheat flour and 2 tablespoons of suji (semolina).
3. Add boiled and grated potatoes, 1 finely chopped green chilli, 1 teaspoon sesame seeds, 3-4 teaspoon chopped coriander, 1 teaspoon carom seeds, 1 teaspoon cumin, ½ teaspoon haldi, and 1 teaspoon red chilli powder in wheat flour. Mix all the ingredients very well.
4. Add water accordingly and start kneading the dough.
5. Make a smooth, tight dough and grease the dough with 1 teaspoon of oil.
How to make Aloo Puri
1. Apply oil on the rolling board and pinch a small ball from the dough. Also, apply some oil to the dough ball to avoid sticking.
2. Roll it to a round shape puri. (Puri should be slightly thick.)
3. Heat the oil in a Kadai and add puri to it.
4. Pour the hot oil on the puri using a spoon. It helps to puff the poori.
5. When the puri puffs up, flip it and fry from another side.
6. Remove the puri from the oil after it turns golden.
7. Finally, aloo puri or aloo ki poori is ready to serve. Serve hot with tomato ketchup or any sabzi.
Suggestion
1. After kneading the dough, immediately start to make the puries. (Don’t rest the dough as resting can make the dough soggy because of potatoes.)
2. While making the dough, add water accordingly as potatoes have moisture in them.
3. You can use all-purpose flour instead of wheat flour to make the aloo puri crispier.
4. Deep fry the puri in hot oil on a high flame.
