Peel and grate 2 medium-sized boiled potatoes.
In a mixing bowl, add 1 cup wheat flour, 2 tablespoons of suji, grated potatoes, 1 chopped green chilli, and all other spices and mix very well.
Add water accordingly and start kneading the dough. Make a smooth, tight dough and grease the dough with 1 teaspoon of oil.
Apply oil on the rolling board and pinch a small ball from the dough and roll it to a round shape puri.
Heat the oil in a Kadai and add puri to it.
When the puri puffs up, flip it and fry from another side.
Remove the puri from the oil after it turns golden.
Finally, aloo puri or aloo ki poori is ready to serve. Serve hot with tomato ketchup or any sabzi.
